Does every state have its own “authentic” type of food?
On the Eastern Shore of Maryland, THE food is steamed crabs covered in Old Bay seasoning and served on a brown paper placemat.
You get a wooden mallet and a knife for opening the crabs’ shells, after eating the meat inside each leg segment, then eat the body section’s contents, except for the lungs, first dipping each piece in melted butter. Instead of napkins, a roll of paper towels is provided for the table.
